Muffin Mix - Ultra Moist BNJ
Ultra Moist Muffin Base produces an extraordinarily moist and rich product with a creamy cake-like texture. Readily suspends fruits and other add-ins and accepts flavorings to create a wide range of traditional and gourmet varieties. This base provides excellent volume and exceptional baked shelf life.
Combine 5 lb mix and 1 lb 12 oz eggs and mix for 1 minute on low speed, then 3 minutes in medium speed. Add 1 lb 8 oz oil and 1 lb 2 oz water and mix I minutes in low speed. Scrape down bowl and mix another 2 minutes on low speed. Add-ins should be incorporated by hand after the mixing process has been completed. Deposit in prepared pans. bake at 350ºF for 35 minutes or until done.
